Vegan Chocolate Whisky Fudge Cake

We’ve come to the last post for 2014. It’s a fairly nostalgic moment. All the usual comments on how quickly this year has gone by, and all that. It’s par for the course, that the end of the year signals the start of binge feasting, drinking and partying with reminiscing of the year gone by. 

 

It’s been an eventful year for us but all in all, a good one. We thank all our readers for following us through the year, patiently putting up with us through the lapses in posts and being with us to bid 2014 adieu and usher in 2015. So for our final post of this year, we bring you a do-ahead adults-only recipe for Vegan Chocolate Whisky Fudge Cake.

 

It’s a good way to use up any left over cake from the days leading up to Christmas and after. Leftover Christmas cake or pudding can be used in this recipe instead of chocolate cake. 

 

This melt-in-the-mouth treat pairs so well with a cup of coffee or a drop of single-malt whisky, late at night when you can just kick back and relax. Sounds dreamy? Go for it. You deserve it.

Vegan Whisky Fudge Cake

 

Vegan Chocolate Whisky Fudge Cake

  • 8 cups crumbled vegan chocolate cake
  • 1/2 cup toasted almond nibs
  • 1/2 cup raisins
  • 1/2 cup preferred whisky

 

Chocolate Whisky Glaze

  • 1/4 cup cocoa
  • 1 cup icing sugar
  • 1/4 teaspoon fine salt
  • 1/4 teaspoon cinnamon powder
  • 3 tablespoons whisky
  • 2 tablespoons cold water
  • 2 tablespoons cocoa, extra for dusting

 

Method: Soak the raisins in whisky for 20 minutes.

In a large bowl, mix the crumbled cake, almond nibs, soaked raisins and the whisky used for soaking them.

Mix well till the cake mixture holds together. If still crumbly, add more whisky or cold coffee.

Press the cake mix firmly into a lined tin, 8” by 8” by 1 1/2”. Chill overnight.

Turn out the cake onto a cutting board.

Mix the glaze ingredients together till smooth. Spread evenly on top of the cake. Chill till cold. Dust with sifted cocoa and using a very sharp knife, cut into 1” squares to serve.
